But what does it even mean?

Basically, the 3-digit number tells us what type it is. With type 316, the stainless steel contains additional 2% to 3% molybdenum which is higher corrosion resistance than most of the insulation products made of 304 stainless steel in the market. It is usually used in the food industry, manufacturing medical surgical instruments and coastal facilities, so it is also called surgical grade and more durable.
